How Rabenhorst’s modern processing technology produces juices so rich in active ingredients and nutrients!
All selected Rabenhorst fruits are full of vitamins, minerals, trace elements and secondary plant substances. The entire juice production process aims for the best possible preservation of the valuable active ingredients and nutrients. Undesirable nutritional changes can begin immediately after the fruit is harvested. For example, fruit enzymes, so-called polyphenol oxidases, can adversely affect the valuable secondary plant substances – in far more ways than just the expected discolouration or browning of the fruit. Processing competency in getting the best out of cranberries: For cranberries, what’s most important is its content of type A-linked proanthocyanidins, a natural and powerful antioxidant. During processing, the fruit’s own polyphenol oxidases produce polymers frommonomeric units which, due to their molecular structure, cannot be adequately absorbed by the human body. A further disadvantage of these larger structures is that they have a distinct bitter taste, which affects the overall sensory impression and taste experience. But these undesirable reactions can be stopped! Using modern processing technology, frozen fruits, such as North American cranberries, are gently thawed within a very short time at Rabenhorst’s production facility. This gives the polyphenol oxidases virtually no time to react with the type A-linked proanthocyanidins. But that’s not all: just a fewmoments later, the polyphenol oxidases are permanently inactivated in a second process step, as are the ascorbic acid oxidases which deplete Vitamin C levels. This is the secret of why Rabenhorst Cranberry juice – pure unfiltered juice from first-pressing only – looks pungent red, tastes only slightly bitter and has a high content of valuable nutrients. This value-preserving manufacturing process is tailored to the specific requirements of each indi- vidual fruit to ensure the best possible result is always achieved. Even with this very high dilution, the juice still maintains a strong violet colour through the intact anthocyanins.

Verarbeitungskompetenz am Beispiel Cranberry: : Worauf es bei Cranberrys wirklich an-
kommt, ist der Gehalt an Typ-A-verknüpften Proanthocyanidinen. Bei der Verarbeitung entstehen durch die Aktivität von fruchteigenen Polyphe- noloxidasen aus monomeren Einheiten Polymere, die aufgrund ihrer Mole- külstruktur vom menschlichen Organismus nur noch unzureichend resorbiert werden können. Ein weiterer Nachteil dieser größeren Strukturen ist, dass sie einen deutlichen Bittergeschmack aufweisen, wodurch der sensorische Gesamteindruck leidet.
Doch diese unerwünschten Reaktionen lassen sich stoppen! Mit moderner Verarbeitungstechnologie werden im Haus Rabenhorst tiefgekühlte Früchte wie z.B. nordamerikanische

Cranberrys innerhalb kürzester Zeit schonend aufgetaut. Dadurch steht den Polyphenoloxidasen praktisch keine Zeit für die Reaktion mit den Typ-A-verknüpften Proanthocyanidinen zur Verfügung. Doch damit nicht genug: Nur wenige Augenblicke später werden die Polyphenoloxidasen in einem zweiten Prozessschritt dauerhaft inaktiviert, wie auch Vitamin C-abbauende Ascorbinsäureoxidasen. Das ist das Geheimnis, warum Rabenhorst Cranberry-Muttersaft kräftig rot aussieht, wenig bitter schmeckt und einen hohen Gehalt an wertgebenden Inhalts- stoffen aufweist.
Dieser werterhaltende Herstellprozess wird auf die spezifischen Erfordernisse jeder ein- zelnen Frucht maßgeschneidert, so dass immer das bestmögliche Ergebnis erzielt wird, z.B. bei der Verarbeitung von Bio-Waldheidelbeeren.

D r. Ruttkat, what is so berry juices, top quality raw material meets very modern and advanced manufacturing technology. This is how we succeed in creating juices that are both very delicious and healthy. These are the best berry juices you can buy – and is acknowledged over and over again by the DLG (German Agricultural Society) Gold Awards. Where do the berries come from? Cranberry and acerola, for example, do not grow in Germany. That's true. The acerola berry grows in Central America, goji berries in Asia, cranberries in Scandinavia and Canada, and blueberries in Eastern Europe. These fruits must either be pressed on site quickly, i.e. in their optimum ripening state immediately after harvest, or frozen. Frozen? Exactly. After the fully ripe fruits have been cleaned and laser sorted, they are shock- frozen and transported frozen to us, where they are then quickly and gently processed into juice. special about your juices? That's easy to answer. With our
But isn't it the case that vitamins are lost during thawing? That's what science assumed ten years ago, yes. However, we now know that thawing frozen berries quickly preserves both the aroma and the healthy components, such as vitamin C, in their entirety. For our production process this means that the berries are defrosted from minus 18 to 4 degrees within 20 seconds. A technology that other manufacturers don't have at all. That means if I want to defrost berries at home... Just put them briefly in the microwave, and then quickly process or consume them. This also has another side effect, not necessarily with berries, but with fruit in general: if you heat a sliced apple or fruit salad briefly in the microwave, the allergens in the fruit become inactive. This is great for people who are sensitive to these substances.

Back to production, why don't you use concentrates as other manufacturers do? That would be much easier... We only process fresh market quality. This is unusual in the juice sector, but here is a simple example: even with the best technology and the greatest expertise, a Michelin-star chef cannot create a first- class meal, if the raw ingredients are not of the right quality. Likewise, a chef cannot turn the best product into a Michelin-star menu, if he does not master the technology. So it requires high-quality technology AND high-quality materials to get the best out of it. That's why we focus on fresh market quality for our products – and, in the area of processing technology, we work together with universities to gain new insights. No wonder your juices are a bit more expensive... Yes, we have always used this type of production. At times, almost the entire market consisted only of juice concentrates. It is cheaper to produce and sell, but, of course, does not have anywhere near the quality of a direct juice. Though, there has also been a change in the quality-consciousness of consumers - we know that we have to spend somewhat more money on high- quality food. How do you ensure that the customer always gets the same product? In fact, we really cannot guarantee that. This is because with direct juices such as ours, you can't just remove something and you also can't just add something. In other words: I cannot standardise such a juice in the same way as concentrated juices do. If there is a rainy summer, then the juice is not as sweet as in other years. However, customers are willing to accept this, because they know that this product is closer to nature.
But Rabenhorst juices are not really suitable as summer thirst- quenchers, are they? No, that's also not our business. Some may say that fruit juice is nothing more than a cola, it also contains 10 sugar cubes! But there is a very recent study by Prof. Dr. Carle in Hohenheim, which outlines that a glass of orange juice consumed daily with a meal does not make you fat, but, on the contrary, it even reduces your body weight. However, juice is not a refreshment drink. Our juices are specifically made with health in mind, by replacing a portion of fruit or vegetables with a glass of fruit juice. We may not be medicines, but if we take cranberry juice, for example, it is almost as effective against urinary tract infections as medicines. What is your favourite berry juice? We have a juice called “Alles Gute” {All the best}. It’s an organic juice containing many different types of berries, on the basis of grape juice and raspberry puree – it tastes simply fantastic. It’s like you’re biting into a whole basket of fresh raspberries. That’s my favourite - highly recommended!
What else do you pay particular attention to in the production? ? We remove oxygen in as many places as possible. This is because the air that comes into contact with the fruit or juice leads to oxidation. This means a loss of aroma, colour and active ingredients. And, we only ever press our fruits once ... What's so unusual about that? Well, you have to realise that most manufacturers press their raw materials several times. You can repeatedly loosen the fruit up and press them again. This way you get even more colour from the skin, but also, at the same time, unwanted substances that make the juice taste bitter, especially with berries. We don't want that, so we only press once and print "from first pressing" on the bottled products. Is it somehow possible to use what is left over from the juice extraction in any way? ? Yes, it is almost completely further processed. As we don't squeeze the very last drop out of the fruit, it is a very high-quality substance and in great demand in the medicinal, pharmaceutical, food and cosmetics industries, for example. The remains of the black currant, for example, go to Finland. There they are dried, the seeds isolated and used to make a high-quality oil which is extremely rich in certain omega-3 fatty acids. We asked German naturopath Beatrice Dean – who now calls Queensland home – for her top immune-boosting tips to stay healthy.
What are your 5 top fruit or veggie tips to keep winter chills and colds away? My top 5 fruit and vegetables to keep you healthy in winter are: 1 Citrus fruits

When we want to keep healthy in winter, we think of oranges, because of their Vitamin C. Is this the best option? Oranges are, of course, one of the first fruits that come to mind if we want to increase our Vitamin C levels, but there are many other fruits that have even more Vitamin C and other health beneficial components. Higher in Vitamin C are guavas, kiwifruit, strawberry, papaya, black currants, lychees, rose hips, starfruit, goji berries and top of the list is the acerola cherry. Acerola cherries contain one of the highest levels of Vitamin C in natural grown foods! They are also high in antioxidants and other vitamins. Vitamin C is an antioxidant, water-soluble and a required nutrient. As it’s not stored in our bodies we have to consume a water-soluble vitamin C source every day. Vitamin C sourced from plants is highly absorbent and bio- available, and therefore beneficial for many different body systems. New ‘Winter Wellness’ Glühwein recipes for 2021 Autumn/Winter means cooler days, cold nights and Glühwein to warm up and brighten your day! Our earlier, flavour-packed and non-alcoholic version was such a huge hit that I’ve been busy trying out some of our new juices! Yes, even better than the original recipes – PLUS I couldn’t resist creating a children’s version!
Inspired by our expanded range of Rabenhorst organic juices, I couldn’t wait to get trying, testing and tasting in my kitchen. The result is not one but TWO new Glühwein creations – Winter Wellness, and Children’s Winter versions – both rich in natural organic goodness, antioxidants, vitamins and flavour! Bring the spicy, fruity aroma of the famous German Christmas Markets into your home in no time with these delicious drinks! Louise’s 2021 Winter Wellness Glühwein • 750ml Berry Selection juice • 125-150ml Cherry Nectar • <50ml 11 PLUS 11 multivitamin juice • 1-2 tsp. Glühwein-Gewürz* • cinnamon stick and orange slices to garnish >> Gently heat, and be careful not to boil! Gourmet tip: add a splash of pure Elderberry juice. Remember: this incredibly rich juice is also very tart in flavour, so you may then need to add extra sugar or other sweetener at the end! Children’s Winter Glühwein • 750ml Rotbäckchen Klassik (Classic) juice • 75ml Cherry Nectar – OR – 50ml Blueberry Nectar • 1 tsp. Here are a few ideas to start you off: Basic Glühwein Spice Mix • 1-2 cinnamon sticks = 1/2-1 tsp. ground cinnamon (remove cinnamon sticks to serve or leave as garnish) • 2-3 Cloves (remove when serving) • Extra raw sugar, agave syrup or similar, if needed for sweetening Get creative! > add a dash of ground cardamon > add star anise or another other wintery, Christmassy spices.
